Pressure cooking is all the rage these days. Some of the benefits of pressure cooking include faster cooking
times--up to 70% faster, retention of moisture, vitamins, and nutrients, intensified flavor, saving energy and more. Loyalties to this popular cook's tool seem to be divided between two camps: stovetop pressure cooking and electric pressure cooking (unfortunately, since I have never used either, I can't speak to the advantages of one or the other).<br />
<br />
So, when shopping for a pressure cooker, what do you look for? I would like to try the electronic pressure cooker. Since space is a concern in my kitchen, I would prefer to have multifunctional unit--perhaps one that also functions as a slow cooker, warmer, steamer, etc. I have been checking out one unit, IMUSA 5-qt. Electric Pressure Cooker, but still haven't pulled the trigger yet.<br />

I would love your feedback...are you into pressure cooking? Why or why not. Feel free to share your experience with pressure cooking, your favorite unit, and any recipes you like.<br />

It's peach season again and I'm excited to update my favorite "go-to" summer salad! It's quick and easy to make, the ingredients are inexpensive so it's great for large gatherings and it's perfect for outdoor events because it contains no mayo. <b>I have updated the pasta salad recipe to include the following:</b> 1/4 cup thinly sliced cucumber and 1 tablespoon sauteed minced garlic. To the <b>Peach Balsamic Vinaigrette </b>recipe I've added 1/4 cup Ken's golden vidalia onion dressing which balances out the savory flavor with a little more sweetness.<br />

This recipe was inspired by a picture I saw in a magazine...I'd been browsing through stacks of current magazines at my desk when I saw it. I got busy and didn't think about it again for a few days. Then, suddenly, the image of the dish came back to me and I couldn't get it off my mind--the tender pasta, fresh summer peaches, plump cherry tomatoes...so I went back to get the recipe but couldn't find it! I was sure I had seen it in a Martha Stewart magazine so I scoured every recent issue I had, went to the website several times to search and still couldn't find it. After several days of searching, I gave up and decided to try to make it without the recipe. <br />

I ran out, got the ingredients I thought should go in the dish, made it and it was delicious but I wondered if I had missed out on something (seasoning-wise) by not having the original recipe. Well, as fate would have it, a few days after I made my version of the pasta, I found the recipe--on the back of a Taste of Home teaser cookbook! I was quite pleased to see that my judgment regarding the ingredients and seasonings wasn't off by much. The original recipe called for <span class="amount"><span class="name">kalamata olives, garlic and optional slivered almonds (I would have skipped the olives and almonds anyway but I would have used the garlic). </span></span>Here's my recipe:<br />
<br />
<b>Peach Tomato Pasta</b><br />
<span style="font-size: x-small;">Seasoned & Stirred by LBTurner</span><br />
<br />
Serves 4-6<br />
<br />
1/2 pound angel hair pasta (cooked, drained)<br />
2 large fresh peaches--sliced (grilled or sauteed)<br />
1 cup grape tomatoes<br />
1/8 cup Thai basil leaves (or any fresh basil)<br />
1/4 cup red onion (thinly sliced)<br />
2 teaspoons <a href="http://www.williams-sonoma.com/products/wild-porcini-sea-salt/" style="color: #990000;">wild porcini sea salt</a><br />
1 teaspoon cracked black pepper<br />
1/2 teaspoon red pepper flakes<br />

<b>Peach Balsamic Vinaigrette</b><br />
<br />
1/2 cup Italian dressing (I used Ken's Three Cheese Italian)<br />
1 tablespoon aged balsamic vinegar<br />
3 tablespoons peach preserves<br />
3 tablespoons fresh peaches (finely chopped)<br />
<br />
<b>Prepare the peaches:</b> Wash and slice the peaches. I used fresh freestone peaches and sliced them with my new handy, dandy <a href="http://seasonedandstirred.blogspot.com/2011/09/cooks-tools-product-reviews.html" style="color: #990000;">peach pitter</a>. Take 2-3 peach slices and chop them finely. Set aside for the Peach Balsamic Vinaigrette<b> (recipe above). </b>For the remaining peach slices: if you're going to grill them, lightly grill on each side for about a minute and set aside. If you are sauteing them, heat a small skillet, add 2 teaspoons of cooking oil and saute the peaches until tender. Set aside until it's time to assemble the dish.<br />
<br />
<b>Prepare the Vinaigrette: </b>In a small mixing bowl, add all ingredients except the peaches and whisk thoroughly until well blended. Add the chopped peaches and stir. Add grilled or sauteed peaches and let marinate for 5-10 minutes. <br />
<br />
<b>Prepare the pasta: </b>Prepare the pasta according to package instructions (add 1 teaspoon of the wild porcini sea salt to the boiling water), drain, place in large mixing bowl, add remaining sea salt, stir and let cool slightly. You can substitute plain or any flavored sea salt for the porcini if you don't have it.<br />

<b>Assemble the dish: </b>While the pasta is still slightly warm, add the vinaigrette mixture, sliced peaches, basil leaves, black pepper, and red pepper flakes. Toss gently. Serve warm or chilled as a side dish or as an entree salad.<br />

If you do not have the fines herbes (a blend of <span class="st">parsley, chives, tarragon and chervil), </span>feel free to substitute it with approx. 1 teaspoon thyme <b>or</b> 1 teaspoon basil <b>or</b> 1/2 teaspoon oregano.</div><div style="font-family: Arial,Helvetica,sans-serif;"><br />

When oil is hot, carefully add the sweet potatoes, onions, celery and all of the seasonings EXCEPT the nutmeg and 2 tsp of the fines herbes. Saute until the potatoes are golden brown and the veggies translucent. Remove the pan from the flame and add the wine to deglaze the pan. Continue to cook over medium-high heat for 2-3 minutes or until the alcohol has evaporated.</div><div style="font-family: Arial,Helvetica,sans-serif;"><br />
</div><div style="font-family: Arial,Helvetica,sans-serif;">Add the chicken stock, cover and continue cooking over low heat for another 10-15 minutes until the potatoes are tender. Turn off the heat and let cool for 5 minutes (there should still be a little chicken stock in the pan).</div><div style="font-family: Arial,Helvetica,sans-serif;"><br />
</div><div style="font-family: Arial,Helvetica,sans-serif;">Puree the potato/veggie mixture in a food processor or with an immersion blender, adding the milk a little at a time. Blend until smooth and creamy (the consistency should be thick but if it is too thick for you, add a little more milk). Transfer the soup to a large pot and add the nutmeg and the remaining fines herbes. If necessary, let the soup simmer for 5 minutes over a low flame to reheat. Do not let it boil! Stir well and serve with a green garden salad or fresh bread (I highly recommend the tomato basil bread from Panera Bread or any crusty, artisan bread).<br />

Consider adding this soup to your holiday party menus. In smaller portions, it serves a lot of people and can be prepared and refrigerated for up to three days in advance! Reheat over a low flame and stir a little freshly-grated nutmeg and fresh herbs in just before serving.<br />

A couple of negatives: the blades for the slicer and shredder could be a little sharper (but they still do an adequate job) and the food handle is a little awkward and wobbly--hard to steady the food item being sliced. Overall, I like this tool a lot because it is sturdy, the spinner part is great and it does make the work a little easier. We served oven fried chicken, roasted herb potatoes, angel hair pasta w/creamy butternut squash sauce, fresh corn on the cob with garlic/herb butter, fresh summer fruits, bread and chocolate candy bars for those wanting a sweet ending to the meal.</span></div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;"><br />

When they saw that we were serious, they were astounded and very, very grateful! In the south (US), many people eat black-eyed peas for the same reason. I was raised by a long line of great southern cooks so I'm used to eating black-eyed peas on New Year's but this year I wanted to try something a little different. Pork is another food considered to be good luck on New Year's day (I didn't know this when I was planning the ingredients for this dish). I chose the pork because I thought it would pair well with the lentils so I was thrilled to find out that I may get a double dose of good luck and prosperity in 2011!</span></div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;"><br />

Don't be put off by the number of steps and ingredients--it's not as bad as it looks. Total prep time (minus the time it took to clean the leeks) is less than 30 minutes. </span></div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;">1. <b>Start w/ the lentils.</b> Place the lentils in a large bowl or pot and run cold water over to clean and reduce some of the starch. You may have to change the water several times to rinse thoroughly. Check the lentils to make sure there are no small stones or other undesirable matter in them. Drain the water from the lentils. Put the lentils in a medium-sized pot and add all of the other ingredients (water and seasonings). Cook on medium-high heat for about 20 minutes--stirring occasionally--until the lentils are tender. Drain any excess water, cover with a top and set aside. *Lentils will triple in quantity once they are cooked. For this recipe you will only need two cups of cooked lentils. Store the remaining lentils in the fridge to use in other dishes (soups, cold salads, etc.).</span></div><div style="font-family: Arial,Helvetica,sans-serif;"><br />
</div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;"></span></div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;">2. <b>Clean the leeks.</b> Trim the leek stalks by cutting the bottom close to the root and then cutting off the dark green tips. The white to very light green part of the leek is the best to cook with. You can use the dark green tips later for soup stock (be sure to wash them VERY well) or discard. Once the leeks are trimmed, peel back the layers and holding the stalk upside down, hold under cold, running water. Check between all the layers to make sure they are cleaned thoroughly. Drain the leeks in a strainer or on paper towels. Dry thoroughly--blot dry with paper towels. Cut the leeks--slice into long strips as shown in the pic above or chop into 1/2 inch-thick rounds. *This step, cleaning the leeks, is the most time-consuming step in the recipe so to save time, you may want to prepare your leeks the day before or several days in advance.</span></div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;"><br />
</span></div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;"></span></div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;">3. <b>Cook the leeks and sauce.</b> Heat the oil and butter in a large skillet under med-high heat. Add the minced garlic, leeks, salt and pepper. Cook the leeks without turning or stirring them for a minute or so on each side. You want them to char a little but watch them so they do not burn. When the leeks are tender and slightly charred, remove them from the pan--placing them on a small plate or paper towel. Leave the skillet on the heat and reduce flame slightly. Add the white wine and stir to deglaze the pan to get all the flavor bits off the bottom of the pan. Continue cooking the wine 2-3 minutes and then add the rest of the ingredients. Stir until all ingredients are thoroughly mixed in. </span><span style="font-size: small;">*If you do not have the pepper jelly, you may substitute it with any flavor of jelly and add 1/2 teaspoon ground red pepper or red pepper flakes.</span><span style="font-size: small;">Let the sauce simmer on a low-medium heat for 5-10 minutes. </span></div><div style="font-family: Arial,Helvetica,sans-serif;"><br />
</div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;">4. <b>Cook the pork fillets.</b> Note: For this recipe you can use a whole pork tenderloin and slice it into fillets, buy fillets at the butcher counter or bagged in convenient individually-wrapped portions. You may use plain or marinated fillets. The fillet is a very tender cut of meat but buying it in a marinade almost guarantees a more tender piece of meat. Beware, though, some marinades may contain a lot of salt/sodium so if you opt for the fillets in a marinade, you may want to reduce the salt in other areas of the recipe where you can.</span></div><div style="font-family: Arial,Helvetica,sans-serif;"><br />
</div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;">If using marinated fillets, you can omit the seasonings in this recipe. Otherwise, season both sides of the pork fillets with the salt, pepper and paprika. Heat the oil in a large skillet under high heat. Cut the sprigs of thyme in half and add two pieces to the skillet. Place a fillet on top of each sprig of thyme (</span><span style="font-size: small;">cook two fillets at a time so the pan is not crowded). </span><span style="font-size: small;">Sear the fillets on high heat--approximately 2-3 minutes on each side. Remove from pan and set aside to rest. Repeat steps for the remaining two fillets. After the fillets have rested (about three minutes) slice them for plating.</span></div><div style="font-family: Arial,Helvetica,sans-serif;"><span style="font-size: small;"><br />

Add the leeks and fillets and drizzle a little sauce over the pork. Garnish is optional but I used a teaspoon or so of chopped roasted red peppers just to give the plate a little color contrast. </div><div style="font-family: Arial,Helvetica,sans-serif;">Then, there are people who have decided that with the constant food recalls, especially with vegetables, a veggie wash might not be a bad thing for a little more reassurance. However, they certainly don't want to buy one when they can create a perfectly respectable veggie wash out of items already on hand (water, vinegar, lemons, baking soda, etc.). Just so you know, I fell into the latter category...until I found "<a href="http://www.veggie-wash.com/" style="color: #990000;">Veggie Wash</a>"...</div><div style="font-family: Arial,Helvetica,sans-serif;"><br />
</div><div style="font-family: Arial,Helvetica,sans-serif;">Veggie Wash is made with water, organic citrus-based solvents and natural oils. It's concentrated so a little goes a long way. The easy-to use trigger spray bottle is fun, handy and the orange fragrance lifts my mood each time I use it. Instead of making a wash every time I needed it (approx. 3-5 times per week) and tossing the solution when I'm done, I just reach for the bottle in the fridge (yes, that's how I store it because I'm hoping it will prolong the shelf life/freshness) and go to work. I've already used it quite a few times and haven't put a dent in the 16oz. bottle. The wash is very effective and is definitely saving me time and money. I really love this veggie wash.
